Aldi's Chickpea Salad
(from Drool Recipes)
15 oz can chickpeas, rinsed & drained
1 1/2 cup edamame (TOO MUCH! Start with 3/4 cup)
1/4 cup matchstick carrots, chopped
1/4 cup red bell pepper, small dice
1/4 cup dried cranberries
3T EVOO (too heavy, try vege oil - yes, better)
3T RWV (next time try 1 1/2-2 Tbls)
1/4 t garlic powder
1/2 t salt (start w/less)
1/4 t black pepper
1/4 t cumin (or more)
1 t+ Italian Seasoning
Herbs for Pinto Beans
Dill weed, celery seed, and bay leaf.
