Bonnie's Potato Salad

A church friend made this last year and it really hit the spot.  There's nothing much different to this recipe, but for some reason it just really hit the spot.  Bonnie Folmar insists using Duke's (brand) mayonnaise.

BONNIE'S POTATO SALAD

1 sweet:VIDALIA (my insistence) onion, minced
4-5 hard-boiled eggs
2+ Tbsp sweet relish
3/4-1 cup Duke's mayo
1 small jar pimientos
1 tsp vinegar
S&P
4 Tbsp (my addition) yellow mustard

7-8 cooked Russet potatoes, cubed

Mix first 8 ingredients (onion through mustard) together.  Add potatoes and fold dressing to coat.

Adjust ingredients to taste.
