Tomato Soup Base

Tomato Soup Base I used one 28 oz can of whole tomatoes (drained) and one 14.5 oz can of fire-roasted diced tomatoes (drained) and just 24 oz of chicken stock.

Beefy Cheesy Mac Soup

Beefy Cheesy Mac Soup 2.5 # 80/20 ground beef (6 0z) 4 Tbsp EVOO 1# diced onion (1/2 cup) 4# tomato base (3 cups) 10 cup chicken broth (1 cup) 1# cream cheese (4 oz) 8 oz elbow mac (1/2 cup)g S&P Brown beef; drain.  Add onion, tomato base & broth.  Whisk in cream cheese.  Add macaroni.  Cook until pasta al dente.

Corn Salad

Corn Salad (F/C) 32 oz frozen corn 2 diced cucumbers 2 diced tomatoes (halved/grape tomatoes)…..or this time I used chopped red pepper 2 diced green peppers 1 diced sweet Vidalia 16 oz mayo 2 oz sugar S&P

Musings on my new life

I am so hoping things are going to get better. Ever since the Love of My Life told me last year that he was leaving me, and every single day since he went to the court one week after our 20th anniversary to divorce me and drive off into the sunset heading towards Palm Springs, CA, I have cried.  Not wept, but CRIED.  Broken down, bawling.  In the car, at work, in church, in the grocery store. And not only do I miss him, bur I am all alone.  While others have spouses, children, siblings, parents, good friends, I have no one.  No beings except my dogs.  And it is for their future that I despair.  I could collapse this minute with a heart attack or stroke and no one would know.  I could drop dead and be in this house for weeks and these poor dogs would have to smell my death.  And then they would be hauled off to a terrible animal shelter. DAMN JIM for doing this to them.  He can do it to me, but DAMN HIM for doing this to them.

Spiced Nuts

In heavy 3 1/2 or 4 quart saucepan mix: 2 cups sugar 4 tsp cinnamon 1 tsp nutmeg 1 tsp cloves 1 cup water Boil to soft ball stage.  Remove from heat. Immediately add 1 1/2 lb walnuts.  Stir well to coat. Pour onto parchment paper; separate with forks. Cool completely and store in tight container. Other nuts of your choice can be substituted for walnuts. -Stamping Grounds, Red Wing, MN
