Cranberry Orange Fluff

Cranberry Orange Fluff (a short-cut recipe from my Mom's original  using real whipped cream) 1 can whole cranberry gel 1/4 cup chopped pecans 1 cup white mini marshmellows 3/4 cup crushed pineapple 1/2 cup mandarin orange 8 oz Cool Whip Drain pineapple & oranges.  Fold everything else together. 7/18 Food City

Sriracha Chicken

This is half of the original recipe.  I would cut it down even further.....this amount was made for a deli case in a grocery store. 1.25# rotisserie chicken 1 1/2 cup mayo 1/4 cup Sriracha 2 Tbsp chopped green onion 1/4 cup small-diced celery (I would add more) 1/4 cup shredded Cheddar 2 Tbsp chopped banana peppers (I would add more) 1 Tbsp chopped cilantro (or to taste)

Berry Delicious

A nice change on a fruit salad, especially in the summertime. 8 oz blackberries 8 oz raspberries 16 oz blueberries 32 oz strawberries 3 T minced fresh mint 2 T honey 1/4 cup sugar

Lime Baked Fish

I made this using  True Lime (I friend shared this with me.....it's wonderful.....tastes like you just squeezed a big, juicy lime wedge in your drink.....I sprinkled it on the fish) Lovely Lime Baked Fish small (2 1/2 oz filets) Nu-Wave 7 minutes NOTE TO SELF:  2 oz filet, 1/2 package of True Lime and 6 minutes in Nu-Wave

Bonnie's Potato Salad

A church friend made this last year and it really hit the spot.  There's nothing much different to this recipe, but for some reason it just really hit the spot.  Bonnie Folmar insists using Duke's (brand) mayonnaise. BONNIE'S POTATO SALAD 1 sweet:VIDALIA (my insistence) onion, minced 4-5 hard-boiled eggs 2+ Tbsp sweet relish 3/4-1 cup Duke's mayo 1 small jar pimientos 1 tsp vinegar S&P 4 Tbsp (my addition) yellow mustard 7-8 cooked Russet potatoes, cubed Mix first 8 ingredients (onion through mustard) together.  Add potatoes and fold dressing to coat. Adjust ingredients to taste.
