Butternut Squash Soup

This is just about the easiest and most delicious butternut squash soup out there.  I made a few adjustments to the original AllRecipes.com listed below. Butternut Squash Soup 1 small sweet onion butter or EVOO or EVOO mist 1 medium butternut squash 2'ish cups water and enough Knorr chicken broth to taste chicken & salty 1/2 tsp dried marjoram 1/4 tsp black pepper dash cayenne pepper 3 oz reduced-fat cream cheese Roast squash (cur in half lengthwise), place cut-side down in 13x9 baking dish coated with cooking spray.  Add about 1/4 cup water.  Roast at about 400 degrees, check at 1/2 hour, cook until tender.  Remove skin. In a skillet, saute onion until tender.  Add marjoram, black, and cayenne pepper. Place cream cheese in blender.  Add cooked squash, chicken broth, onion, marjoram and pepper.  Blend. 2 chili recipes

My (former) neighbor Carolyn, who has been so kind and gracious to me during this awful time of divorce and losing our home and my having to move to Ringgold, GA, has been delivering soups and chili to me over the last week or so.  She brought some chili the other day that was so good.  I asked her for her recipe which she so sweetly provided.  And she added another recipe she loves to make when making a big batch, a copycat of Wendy's chili.  I wanted to post these before I lose them in the mess of moving a house.  Here are the two recipes: CAROLYN'S DELICIOUS, TRADITIONAL CHILI 1 1/2 pounds ground beef 1 pack McCormick chili mix 1 can petite diced tomatoes 1 can tomato paste 1 can tomato sauce 1 large onion 1 tsp cumin 1 1/2 tsp garlic powder 1 tsp salt 1/2 tsp oregano 1/2 tsp sugar 1/8 tsp cayenne 1 can kidney beans 1 can chili beans Brown meat and onion.  Drain.  Add all other ingredients.  Cover and cook 1 hour on low, sti...
Today is Day Two of Jim having divorced me.  The photo above is my new home. I feel so lost without him.  And he's moved 2,000 miles away.  He left everything behind and drove off with basically just the clothes on his back. I pray he will remain in touch with me.  I know we'll be talking as there are things I'm going to need his help.  I also pray that he will allow this divorce to evolve into a friendship.  I understand he could no longer be married to me, but it is my sincere wish that we can go back to being very good friends.
